CultureMap Features Perseid Named to Bon Appetit's 20 Best New Restaurants of 2025
CultureMap Houston featured Perseid receiving national recognition from Bon Appetit, which named Chef Aaron Bludorn's French restaurant at Hotel Saint Augustine to its prestigious list of The 20 Best New Restaurants of 2025.
Published Friday, September 12, the Bon Appetit list includes restaurants from 18 cities across America, with both Washington, D.C. and Los Angeles earning two entries each. Perseid stands as the only Texas restaurant to make the list, highlighting Houston's culinary excellence on the national stage.
CultureMap reports that writer Sam Stone praised both Perseid's distinctive setting within the boutique hotel and its innovative menu. Stone described the restaurant as "an airy, modernist space brimming with sagebrush" and hailed it as serving "a menu you won't find at another hotel in America."
The unique menu reflects the collaboration between Chef Aaron Bludorn and Perseid's executive chef Michael Le. Together, they've created dishes that blend Cajun and Vietnamese flavors into classic French fare, including a burger dressed with banh mi toppings and a crawfish sausage. Stone writes, "What might be a cacophony of notes in less skilled hands blends into a delicious harmony as dinner unfolds."
